Appetizers
Kale Chips A.MAZ.ING. Potato chips don't hold a candle to these crispy chips! I had to turn my oven up to 400 and leave them in a little longer, so experiment with a batch. Also, if you have leftovers (I've never had leftovers) and they get soft, you can crisp them up again in the microwave.
Beet Chips You'll never want to eat another potato chip again. These have great crunch and are addictive!

Salads & Soups
Kale, Chickpea, and "Chorizo" Stew- I use vegetarian chorizo-style sausage in mine, but of course you can use the real thing too! This stew just makes you FEEL good inside!

Side Dishes
Roasted Mushroom & Green Bean Farro This could be served as a salad as well. I made a big batch and had it for lunches during the week. So satisfying!

Main Dishes
Spiced Beef Stew I made with using homemade seitan and it was AMAZING! Even my meat eating co-workers liked it! Very hearty and perfect on a crisp fall or cold winter day! VEGAN!
Dobu Jorim This is a favorite! Spicy soy braised tofu, serve it with kimchi and sticky rice for a delicious Asian dinner!
Mushroom and Tofu Lasagna I made this for Christmas dinner and served it with a simple tossed salad. It was perfect. The texture is hearty and "meaty". It's VEGAN!
Spicy Noodles w/ Peppers I <3 spicy! These were simple, quick, and hot!
Sweet and Sour Tempeh  This dish was perfect! Easy to make, many of my favorite flavors (garlic, ginger, cilantrao, lime), colorful and delicious! VEGAN!

Desserts
Salted Peanut Butter Cups I made these for a potluck at work and they were VERY popular!
